How we keep ours clean from the start
We use true suet only, the firm fat found around the kidneys. Suet sits deep inside the animal, away from muscle and blood, so it starts out cleaner than trim fat ever could.
From there, we render it low and slow: the lowest heat, for the shortest time, with no water, salt, or additives. We strain it carefully so nothing but pure fat makes it into the jar. This is also the method that keeps tallow's fatty acids, mainly oleic, palmitic, and stearic acid, in their most stable, skin-familiar form.
Done this way, rendered tallow on its own has almost no smell at all. It is closer to a soft, neutral, waxy scent than anything you would call beefy.
